The cold days of fall are just the time for a pot of soup showcasing potato. Soups prepared with potatoes range from broth-based to those enriched with cheese, butter and cream. The potato harmonizes with the different flavors of so many national dishes by offering a natural neutral background note. Experiment using a standard recipe for the soup by attempting one of these combinations:

- peanut sauce, mussamum curry paste, cilantro and ginger
- chipotle cumin, and cinnamon

The fall vegetables blend with potatoes. Add a little sweetness and a warm color by introducing other root veggies like parsnip, carrot, and rutabaga to this dish. The rich and creamy give of a bite of boiled potato is emphasized beautifully by the brilliant contrast and texture of kale, escarole, and mustard greens. Winter squash and pumpkin pair delightfully with potato to provide hearty and filling soups and stews. From light blends of mozzarella and provolone to vibrant goat and blue cheese flavors, soups based around cheese are perfect for the addition of potatoes.

The addition of potato puree well-blended with cream or milk can lighten an overly thick bean or split pea. Potato starch makes a stodgy soup more velvety and provides a component of sophistication to the flavor, where adding water would simply thin out the texture as well as the taste. Another ingredient not usually taken into consideration is peanuts, which adds nutrition as well as a rich, savory component to a creamy potato soup.
